The Bullion Hop variety is a very old English varietal that was the result of an open pollination in England with Canadian rootstock. Historically, the English brewers declared the hop tended to a “wild American” aroma note or as we know it today a “cattiness” that was considered offensive. Over time, the hop gained a following as a higher-yielding bitter hop that performed well in lagers. It was rediscovered by the craft industry as a hop that was available in surplus and that complemented the citrus and floral notes of the “new” Cascade variety.
